Turkey soup


Another thing I love about thanksgiving : leftovers! We had a lot left after our "thanksgiving-for-two". I made my first turkey soup (leftover) and Bee made the turkey sandwich. I like making soup because you can just throw in veggies that you like. These are the ingredients I used:

1 cup leftover roasted turkey
1/2 cup carrots
3 stalks spring onions or scallions
dash of black pepper, thyme, salt
1/4 medium onion, chopped
1/2 tbsp. chives
2 pieces quartered marinated artichoke
4 dried Chinese black mushrooms (shiitake)
sotanghon (bean thread) noodles
